Recipe of the Month
James & Kieren's
Beef Burgers
James and his Mentee Kieren have been cooking up a storm on their activities at the Cairns Lagoon. You may want to try out their recipe.
Ingredients:
- 750g beef mince (like topside)
- 1 large brown onion, grated
- 2 garlic cloves, crushed
- 1 tbsp Worcestershire sauce
- 2 tsp Tabasco sauce (optional), or to taste
- 1/4 cup chopped fresh continental parsley
- 70g (1 cup) breadcrumbs, made from day-old bread
- 1 egg, lightly whisked
- Salt & ground black pepper, to taste
You will need:
- 2 tbsp olive oil
- 6 hamburger buns, halved
- 150g cheddar cheese, thinly sliced, to serve
- 3 medium (about 450g) ripe tomatoes, sliced
- tomato sauce
- 6 Iceberg lettuce leaves, shredded, to serve
- Place the beef mince, onion, garlic, Worcestershire sauce, Tabasco sauce, parsley, breadcrumbs and egg in large bowl. Season with salt and pepper. Mix with your hands until evenly combined.
- Divide the mixture into 6 equal portions (you can use a 125mls or 1/2 cup measuring cup if you like). Shape each portion with your hands into a patty about: 10cm in diameter and 1.5cm thick.
- Place the patties onto a tray lined with greaseproof paper. Cover with plastic and place in the fridge for at least 30 minutes to rest. Chilling the patties will help them hold together when cooked. This also allows the flavours in the patties to blend and develop. If you chill the patties for any longer, increase the cooking time slightly.
- Meanwhile, preheat BBQ on high. Place the hamburger buns, cut-side up, on the preheated BBQ and toast for 1 minute or until golden. Leave the grill on.
- Cook half the patties for about 5 minutes on each side or until browned and cooked through. Transfer the patties to a plate, set aside and keep warm. Repeat with the remaining patties.
- To serve, top the bottom halves of the toasted hamburger buns with the patties and then the cheese slices. Top each with the sliced tomato, tomato sauce and shredded lettuce, sprinkle with salt and pepper and then cover with the hamburger bun tops. YUM!

Hi ,
I'm back and feeling very refreshed and relaxed from my honeymoon. The wedding all went well (I was only 10 minutes late) and the holiday in Europe was wonderful. As promised I have a picture of me at the Eiffel Tower.
Matt Simpson did a great job of looking after the Scheme while I was away. It was very much appreciated. Also thank you to all who continued registering your activities.
The month of August was very busy as Mentor Training was held. Please welcome the Scheme's new mentors who trained on the 16th August. Training will next be held in November and will be the last one for the year.
Also planning is under way for a fun major fundraiser in the form of a Trivia Night! Put your thinking caps on and get your group of 10 ready!

CYMS Mentor Recruits
Please welcome the Scheme's newest recruits from the last Mentor Training Session which was held 16th August. The training day was very interactive where learning and many jokes and laughs were shared.
Mentor training includes sessions on communication with young people, stages of adolescent development, an opportunity to talk to past and present mentees and mentors and an opportunity for mentors to workshop activity ideas. It is also a forum for which training mentors build networks and friendships.

Phillips and Jordan's catch of the day
On the 25th of May this year, a fishing competition was held for young people which was sponsored by local tackle shops. It was held at the Barra farm out the back of Gordonvale. They gave all the young people some lures and a bag of goodies and a sausage sizzle and drinks. They put everyone into groups and then they fished from the ponds.
I think from memory, the fish that Jordan caught was about 875 grams. He did take it home, and his Gran cooked it and enjoyed it.
